Brighten up your weeknight with this Caribbean Grilled Chicken! Made with our delicious White Balsamic and light, summery spices – this is the perfect meal for when you need something quick!
Ingredients:
1 lb boneless skinless chicken breasts
¼ cup Sutter Buttes White Balsamic Vinegar
¼ cup Sutter Buttes Arbequina Olive Oil
1 tsp paprika
½ tsp pepper
½ tsp Sutter Buttes Himalayan Sea Salt
1 tsp garlic powder
1 tsp Sutter Buttes Wildflower Honey
Salsa:
1 cup pineapple, finely chopped
¼ cup red pepper, finely chopped
¼ cup cherry tomatoes, finely chopped
¼ cup onion, finely chopped
½ tsp pepper
1 tbsp Sutter Buttes Arbequina Olive Oil
⅓ tsp Sutter Buttes Himalayan Sea Salt
In a bowl whisk together marinade. Add chicken to marinade and allow to marinate for at least 30 minutes (overnight is best!) While chicken is marinating, prepare salsa and heat grill. Cook the chicken on high heat for 4-5 minutes on each, or until internal temperature reaches 160 degrees. Let chicken rest for 5 minutes before serving.
Serve the chicken with salsa over salad or with rice.
