Mashed Potatoes with Manchego Cheese

There is nothing like mashed potatoes made from scratch.  Whip these up for the next family dinner for a stick to your ribs side that is sure to please.

Ingredients:

2 Tbsp Sutter Buttes Harvest Garlic Olive Oil
3 pounds russet potatoes, peeled and cut into 2 inch chunks water
Sutter Buttes Pink Himalayan Sea Salt
1 1/2 cups heavy cream or whole milk
1/4 cup Manchego Cheese, cut into 1/4 inch dice

Directions:

Bring potatoes to a boil in a large pot of water. Salt the water and boil over moderately high heat until tender, about 20 minutes. Drain and return to the pot. Shake the pot over moderatly high heat for 1 minute to dry the potatoes. Mash the potatoes with a masher, then mash in half the cream/milk. Add the the remaining cream/milk and mash again. Stir in the Manchego Cheese to melt, then slowly stir in 1 Tbsp of the garlic olive oil. Season with the pink sea salt and transfer to a serving bowl. Drizzle with the remaining 1 Tbsp of garlic olive oil and serve.
