Puff Pastry Appetizers

Customize this recipe with your favorite cheese and jam or tapenade.

For Jam and Brie Bites

Ingredients:
2 sheets puff pastry
12 cups Sutter Buttes Jam; Meyer Lemon Ginger, Strawberry Vanilla, Blackberry-Raspberry, Warm Spiced Apple, Peach Bourbon, or Merlot Wine
10 ounces brie cheese, rind removed and cut into ¾ inch cubes

Directions:

Cut each sheet of puff pastry into 12 squares and place inside mini muffins cups. (You may want to lightly spray to ensure they won’t stick). Try not to leave any part of the muffin cup uncovered by dough or the cheese and jam will stick. Place a square of cheese inside each cup.  Then add about 1 T jam on top of the cheese. Bake in a preheated 375°F oven till edges are a light brown, 10-15 minutes. Cool a few minutes (but not completely) before removing from muffin tins.

For Tapenade and Gruyere Bites

Ingredients:
2 sheets puff pastry
1 1/2 cups Sutter Buttes Tapenade or Spread; Sun-Dried Tomato, Farmhouse, Spicy Antipasto, Porcini Truffle, Kalamata & Caper, or Green Olives
10 ounces gruyere cheese, cut into ¾ inch cubes

Directions:

Cut each sheet of puff pastry into 12 squares and place inside mini muffins cups. (You may want to lightly spray to ensure they won’t stick). Try not to leave any part of the muffin cup uncovered by dough or the cheese and tapenade will stick. Place a square of cheese inside each cup.  Then add about 1 T tapenade or spread on top of the cheese.   Bake in a preheated 375°F oven till edges are a light brown, 10-15 minutes.   Cool a few minutes (but not completely) before removing from muffin tins.
