These salted caramel mousse cups are the perfect treat to serve! You can easily make these cups with frozen puff pastry or filo dough, an an easy homemade caramel mousse. They’re super pretty and tasty – perfect for a holiday or just to enjoy!
Ingredients:
1 cup strawberries, cut into bite-sized pieces
1 cup blueberries
8 sheets filo dough or 2 sheets of puff pastry dough
1 cup heavy cream
1/2 cup mascarpone
¼ cup Sutter Buttes Sea Salt Caramel Sauce, plus extra for drizzling
Directions:
Preheat oven to 400 degrees. Grease muffin tins. Slice filo or puff pastry into 2 inch squares (you can use a pizza cutter). Place pastry squares into muffin tin and press into the tins to form a cup. Bake for 10 minutes until pastry is golden brown. Remove from oven and allow it to cool completely.
While puff pastry is cooling, whip heavy cream until it forms medium peaks. Gently fold in mascarpone and caramel sauce. Drop caramel mousse filling into cooled pastry cups. Top with fresh berries and additional caramel sauce.
